Origin History of Butter Chicken
It all began before the partition of India when the owners of Mukhey da Dhaba in Peshawar sold the outlet to Kundan Lal Gujral, who worked in the dhaba. Kundan Lal Gujral then renamed the establishment Moti Mahal after purchasing it from the previous owners. The restaurant was famous for its Tandoori Chicken, but due to the sheer amount of unsold dry chicken pieces that were being wasted, Kundan Lal had the idea to play around with the pieces by coating them in a thick gravy made with butter, fresh cream, tomatoes, and ground spices. This led to the creation of the Butter Chicken.
When Gujral arrived to Delhi after the partition and built the very first outlet of Moti Mahal in Daryaganj, he had no idea that he was going to be a part of history in the world of Indian cuisine. However, he is now recognised as one of the most influential figures in the history of Indian cuisine.
